Which means it is time for my favorite food prep time is upon me again.  I love packing lunches for the kids.  I like to pack lunches for J too, but I don&#8217;t think he would appreciate some of the cute things I do to the kids bentos.  I have been practicing the last few days by packing bentos each time we leave the house.  I made my annual binge shopping trip to the little Japanese shop in Plano for cute bento treats like mushroom cookies and pocky.</p>
<p>I am not sure what it is that I like most about packing lunches.  Maybe it is being able to make food look pretty like little works of art.  Or maybe it is knowing that my children are eating healthier than they would if I relied more on lunch standards like chips and little debbie cakes or even bought their lunch at school.  Or maybe it is knowing I am doing my part for the enviroment by packing reusable bento style lunches instead of the American standard of plastic sandwich baggies and disposable lunch sacks.  Or maybe it is just the excuse to play with food in a way that dinner just doesn&#8217;t lend itself to.</p>
<p>But what would make my lunch packing experience perfect?  I will confess to lusting after the laptop lunchboxes for about 2 years now.  And now they are becoming more easily available.  <a href="http://ow.ly/kynE">Barefoot Mommies is even having a giveaway.</a></p>

		<title>Creative in the Kitchen &#8211; Mango Turkey Cutlets</title>

			<content:encoded><![CDATA[<p>Mango Turkey Cutlets &#8211; Adapted from a crockpot recipe when I didn&#8217;t have 6 hours to wait.</p>
<p>Ingredients:<br />
1 onion diced<br />
1 green bell pepper diced<br />
1 mango peeled, pitted and diced<br />
1 garlic clove<br />
salt<br />
pepper<br />
1c chicken broth<br />
6 turkey cutlets</p>
<p>Cut the garlic in half and rub the cut side over both sides of the cutlets then salt and pepper each cutlet.<br />
Saute the mango, onion, bell pepper and the garlic  with a bit of oil of your choice (I used pecan).  Then place the cutlets in the veggies and pour the broth over and simmer until cutlets are cooked through. </p>
<p> It doesn&#8217;t take very long.  Matter of fact it finished before i was finished wiith the rest of the meal and I just turned off the heat and let them rest in the broth until we were ready to eat.</p>
